The last copy of The Auberge of the Flowering Hearth that I had, I’d lent to a good friend who was excited about starting a career in cooking at a local culinary school. I don’t know another book that captures precisely everything I love about cooking, written by a man truly passionate about his subject, and I though he’d like to read it, as it’s been very influential to me as a cook. Then I moved and never got it back. But it was the one time in my life that I was happy someone else had become the owner of one my books, because it’s one that cooks of our current generation have likely forgotten about, or never heard of in the first place.

Fortunately last summer when I was in New York, I went to browse the shelves at the great cookbook store – Kitchen Arts and Letters – and saw a brand-new copy, and picked it up. It’s one of those rare books that I can read over and over and over again, and never get tired of, so I can’t imagine not having it on my shelf to pull out whenever I want. And re-reading it again, in France, reminds me of how Roy Andries de Groot, the author, was so perfectly able to capture a place, and time. L’Auberge de l’Atre Fleuri was a rustic mountain inn run by two women, Mademoiselle Ray and Mademoiselle Vivette, who had the kind of place we all dream about happening upon, but no longer exists. The two women were dedicated not just to splendid cooking, but were fastidious about using the bounty of the mountain-walled valley, and the fields, lakes, and forests, that were guarded by those towering mountains.

Rochoux’s Hazelnut Praline Paste

I probably shouldn’t admit this, but I rarely go over to the Saint Germain des Près area much. I know, it’s a popular destination for many, but if I head over there, it’s usually for one thing, and one thing only: Chocolate.

Most of the chocolatiers are clustered over there because, well, if you can afford to live over there, that’s where most of the folks are who buy boxes of chocolate. Well, except me. So I make the trek over there to get my licks in, and say hi to the folks who haven’t seen me in a while.

One such person is Jean-Charles Rochoux, whose chocolates are at the top of my list in Paris. He has just one shop, not an enterprise, and is one of the few people who makes his chocolates in Paris; real estate prices make it hard for people to set up candymaking operations. So every day, Monsieur Rochoux gets started in his basement workshop, and every few months, I go over there and see what’s new.

Le Pont de Brent

After my visit to the Vevey market with Chef Stéphane Décotterd, we headed back to Le Pont de Brent, his restaurant located above the lakeside Swiss town of Montreux. While he was laying out the fish for the day, which he had just sourced, I noticed the kitchen was unusually calm for pre-service and I didn’t see anyone in the usual panic that happens in restaurant kitchens just before the customers arrive. The cooks were quietly doing tasks like peeling and slicing vegetables into tiny pieces, rolling leeks around scallops with thin wisps of black truffles in between, and baking off miniature tartlet shells.

Laid out neatly on trays, he showed me the different fish he had, from a kite-sized Turbot to a blue lobster from Brittany, with tiny black eggs stuck in between all the craws and crevasses.

Les Vacances

We’re packin’ up our Euro-skivvies and hitting the beach! I’m heading off on a much-needed vacation, a sunny escape from the mid-winter morosité. I’ll be checking in here from temps en temps and perhaps posting some photos of my fun in the sun, so don’t stray too far.
