A Quick Trip to New York City

Last week, I had to make an unexpected trip from Paris to New York City. It was kind of a last-minute affair, But I’m always up for a trip to New York, even in the winter, which I remember from my years living on the east coast, how brutal they could be. Fortunately we hit a sweet spot and people were actually wearing t-shirts on the streets – in December!

Unlike being able to forget that bitter cold I’d experienced for so many winters in New York, I did forget how civic-minded Americans are and actually saw two people pick up trash on the sidewalk (that wasn’t theirs) and toss it into a nearby garbage can. People are polite, holding doors for one another and excusing themselves when they’re in someone’s way. I also forget how blue the skies are in New York, even when it’s cold, in the middle of December. New York City can be brutally cold, but there’s usually a cheerfulness in the air that’s unmistakably très américain.

And I also forget how eager people in stores are to help you, and when I asked at Bergdorf Goodman if they knew where the display of candies from Fouquet in Paris was (the owner asked me to take a picture for him), the person I asked on the ground floor actually took a personal interest helping me, and insisted on taking me up to the top floor and asking everyone up there to find out where they were.

(Interestingly, they said the shipment had arrived a little late and were being put on display the next day, so it’s nice to know that even in America, where Romain marveled a few times, saying “People make sure things work here!” – they still have troubles with deliveries.)

Paris-Lausanne Tour 2012

I don’t know why, but almost all the pictures from my Paris-Lausanne culinary tour came out kinda goofy. Out-of-focus, askew, grainy, or there’s odd pictures of sidewalks, one of me lounging in a bathrobe, guests eating and drinking (no one looks great when putting a forkful of food in their mouths so those pictures I’ll keep to myself…and I hope they do likewise), lots of chocolates rolling off conveyor belts, and even those scrumptious, insanely good Swiss meringues with double-cream Gruyère tasted (a lot) better than they look here.

The week passed by as a whirlwind of tastes – we moved from one chocolate shop to the next in Paris – Fouquet, Jacques Genin, Patrick Roger, and Jean-Charles Rochoux. Then, when we hit Lausanne, we switched gears, focusing our attention on cheese, air-dried beef, and white wine.

Paris-Lausanne Tour, September 19-25th

Due to demand for my Paris and Lausanne Gastronomy Tour, we’re offering a second trip this fall. We’ll begin the week in Paris, exploring chocolate shops, tasting wine, and dining at my favorite tables in Paris. Then we’ll take the high-speed TGV train to Lausanne, Switzerland, to this lovely small city perched above Lake Geneva.

With the historic Lausanne Palace and Spa as our home base, we’ll sample everything from molten cheese fondue to ribbons of air-dried beef..as well as sip lovely regional white wines, which are produced in such small quantities that they rarely make it out of the area. (The exception are the bottles in my suitcase.)

Fouquet’s Chocolate-Covered Marshmallows

I’ve been quoted on more than one occasion as saying something along the lines of “To a pastry chef, a good marshmallow is the equivalent of a pricey and rare black truffle to a regular chef.” And thinking about it as I type right now, every cookbook I’ve ever written has some sort of recipe for a marshmallow or marshmallow-topped dessert in it.

A Visit to Fouquet Chocolate & Confections



Fouquet is one of my favorite shops in Paris. I’m absolutely addicted to the thin crisps of spice bread enrobed in dark chocolate as well as to the house-made pâtes de fruits and the coconut-filled rectangles cloaked in chocolate. And, of course, the caramelized almonds, too.

It’s rare to find a shop still making candies the old-fashioned way and I thought it would be fun to share it with you, along with meeting Fréderic Chambeau, whose family has owned the shop for several generations.

Paris Gastronomy Tour

Doing a culinary tour in Paris is always fun, because not only do I get to meet some new people and make new friends (important…since the old ones keep deserting me), but I get to revisit my favorite places in Paris. And this week, we made a detour in Lyon as well. So there was a lot more to see, and eat…

Lyon is a wonderful city. Kind of a miniature version of Paris, but younger, more spacious, and more relaxed. The people are plus cool, and in less of a rush—perhaps because they are so busy digesting all that rich food down there.

I’ve written about Bernachon before, and this trip, we had an especially warm greeting in their adjacent café, starting with puffy brioche and warmed pitchers of hot chocolate, made with the famed bean-to-bar chocolate that’s fabricated just a few doors away.

Fouquet

I’m not sure if there’s a French term that’s the equivalent of “phone tag.” I’m pretty sure there isn’t one for “internet tag”, but I can say with relative certainty that there isn’t one in English. At least I think there isn’t.

I’d met Frédéric Chambeau’s father about five years ago and he graciously invited me to visit their laboratoire in Paris, but hadn’t heard back after our last bout of telephone messages. Then I got an e-mail from Frédéric, who’d taken over Fouquet, and after a few months of back-and forth messages, we finally kicked it into gear and made a date.

I don’t think there’s a comparable expression for “kick into gear”, but it wouldn’t be the first time I got something wrong in French. Or in English, if you want to get picky about it.

Fouquet is one of the oldest confectioners in Paris, and one of the last remaining who makes their candies and chocolates in their own shop, which is tucked away on a sidestreet near Drouot, the main auction house of Paris. Speaking of terms, when I asked him what “fouquet” meant, he told me it’s an old French term for squirrels, but didn’t know how the business took the name. (There’s a fancy-schmancy restaurant on the Champs-Elysées with the same name, but there’s no connection to them.)

When I visited Fouquet, it was just before the Christmas crush and the staff was in full swing, wrapping boxes of all sorts of treats, including colorful pâtes de fruits, orangettes (candied orange strips dipped in dark chocolate), and hand-wrapped squares of buttery salted caramel.
