Ciel de Paris

Most people already know that a good view doesn’t necessarily go hand-in-hand with a remarkable culinary experience. But I’d gone to Ciel de Paris many years ago and found the food pas mal. And to top it off, it was reasonably priced, which is so often not the case in places that tend to attract out-of-towners. But what’s truly the draw here, aside from the 70s decor, are the views from the top of the Tour Montparnasse, which are unparalleled in Paris. The views are even better than the views from the Eiffel Tower, since you get to peer down on the famous tour, which was once just as reviled as the blocky Tour Montparnasse currently is.

Unlike those philistines that didn’t like the Eiffel Tower when it was built, I think I am the only one in Paris that doesn’t mind the Tour Montparnasse. The black rectangle lurking in the background of Paris isn’t nearly as objectionable as a number of some of the recent modern buildings, such as Les Halles (which is currently getting a makeover) and the Opéra Bastille.

Angel Food Cake

Last summer when I was in New York, a French acquaintance sent out a missive, looking for an Angel Food Cake pan in Paris. I’ve been thinking about making one for a number of years. But there are a number of American baked goods that don’t quite translate, and this classic cake – made like a big, baked meringue – well…I was pretty certain this would be one of them.

For one thing, the French don’t normally do tall cakes (except for le Croquembouche, a tower of cream-filled pastry puffs, which is generally reserved for weddings), and the local palate would probably find Angel Food Cake a bit on the sweet side. And indeed, for years, I didn’t like Angel Food Cake either and tended to avoid it. Until one day, I was eating a slice, and decided that I did like it. In fact, I realized that I loved it. And now, for the rest of my life, I have to spend my nights staring at the ceiling over my bed, filled with regret for the years that I went without it.

Lille, Aux Moules, and a Sink

“Three weeks?! Is that all?” they laughed uproariously, as a response to my telling folks at a dinner party the other night about how much trouble I was having finding things like sinks, tiles, light fixtures, and so forth, for the renovations of my apartment. I literally spent weeks and weeks combing plumbing catalogs, scoping out a myriad of stores devoted to kitchen fixtures, and relying heavily on our friend, the internet, in search of a plain, large, white sink.

I don’t want swoops and swirls, (and I only have one more Ikea visit left in me, and I’m banking that for something really important) – I want a generous basin that’s large enough to hold a few pots and pans. And I’m not interested in a purple or green one. You wouldn’t think it would be all that hard – and neither did I – but after three solid weeks (and I mean, twenty-one days and twenty-one nights), I finally found one in France. The only problem? It was in Lille.

As I’ve shown many friends here, tout est possible, so we decided to make a day trip up to the city in the North, just a few hours from Paris, and while there, eat some of the local fare. Because things are so frantic right now — imagine if I took me three weeks to find a sink…then I really need to get cracking on a toilet, a towel bar, kitchen cabinet handles, a soap dish, and light bulbs — so I don’t have a huge amount of time.

If I ever get back to Sydney, I may never leave. And not just because it takes the better part of a full day to get there, or to recover from the jet-lag, which Australians know about all-too-well…since for them to go anywhere, it’s a considerable journey as well. But what I found interesting was whenever I told any locals how great their city was, they’d say, “Yeah, it’s pretty great.” Most of the time when you talk to people who live somewhere, they’ll invariably have something to grouse about.

I liked walking around the small, but urban center of the city, with its tall buildings, shopping centers, and compact Chinatown. And I enjoyed putting on my walking shoes (and socks) wandering the various neighborhoods, which are eminently walkable and you can chance upon little cafés brewing up excellent coffee, sleek design shops, and ethnic restaurants with food that will blow your support hose off.

Globus

Yes, Switzerland has a reputation for neutrality, but the food in Switzerland is often an international mix. There are some wonderful local specialties but a good number of other dishes are influenced by its neighbors; namely Germany, Italy, and France. So it seems only fitting that the most wonderful department store in the country is named Globus, because its name seem to incorporate a philosophy of not just looking within the borders of Switzerland, but outside of them as well, in search of all things good to eat. And that certainly seems true of the grand food hall in the branch of their store in Lausanne.

Many department stores in cities around the world have entire floors dedicated to foodstuffs and are good places to make a whirlwind food tour, which I did with my tour group recently. But even on my own, I usually make it a point to hit one when I travel, such as the KaDeWe in Berlin, Marks & Spencer in London, or the Grand Épicerie in Paris. But whereas KaDeWe is super orderly and La Grand Épicerie can feel like a train station at rush hour, the food halls of Globus have an air of calm and comfort. And yes, even when you’re in the presence of – *gulp* – my tentacled nemesis: octopus made into sausage.

Homemade Marshmallow Recipe

Some of my favorite candies are marshmallows. Actually, I should backtrack a bit and say at the very top of my all-time favorite things to eat are marshmallows. I love their pillowy softness and their tender sweetness with undertones of vanilla. If it sounds like I’m getting a little Proustian for them, you’re right. I recently made several batches for some projects, which not only rekindled my love of them, but when I brought them to a few parties, people were stunned at how good they were and could not stop raving.

Of course, all compliments are welcome—I’ll take them whenever I can get them. But there’s really nothing complicated about making marshmallows and anyone with a few extra egg whites on hand and a sturdy mixer, can produce world-class marshmallows right at home.

La Gruyère Double Cream

When I was at Macheret Fromage in Vevey, Switzerland, I noticed stacks of perfectly piped meringues, piled up to ceiling. I wondered why a cheese shop would have so many meringues? It wasn’t until I headed way up in the alps, to the Maison de l’Etivaz, where a Swiss traveling companion said – “Ooooh, La Gruyère double cream is very good. But very, very dangerous.”
