Chili with Chocolate

I used to wait tables in a vegetarian restaurant many, many years ago, and one of the items on the menu was Cashew Chili. I would say about one-third of the customers would look at the menu, then look up at me, and ask – “Are there really cashews in the Cashew Chili?”

It was hard to respond to that. Although the answer “Yes” seemed pretty obvious (at least to me), it was hard to say “Yes, the Cashew Chili really does have cashews in it” without sounding like a wise-ass. Thinking about it now, I probably could have come back with a more interesting retort and I guess should think of another one for this chili recipe, because it is made with beans, and likely to raise some hackles.

Therefore, I would like to officially recognize that real Texas Chili does not have beans in it.

French Tomato Tart

This week I saw the first promise of tomato season. A few brightly colored cherry specimens were brought home from the local market, as well as the more standard varieties. I was down in Gascony visiting my friend Kate Hill, and her photographer friend Tim Clinch was there preparing to lead a photography workshop. Looking for something tempting and colorful, tomatoes seemed the obvious choice as willing subjects.

In addition to the profusion of flowers plucked from the lush garden by the canal du Midi, the tomatoes had their moment in front of the camera. But once the participants stopped clicking, we grabbed them and put them where they rightfully belong: In the kitchen.

Creamy Feta-Red Wine Vinegar Salad Dressing

When I was a newbie, someone in the cookbook biz once told me that if a cookbook has one great recipe in it, it’s totally worth it. And I agree with that. I have a mountain of cookbooks, and most have plenty of tempting recipes but I’ve only made one thing from many of them. But those that do make the cut become standards—or what we call “go to” recipes.

One such cookbook was the Joy of Cooking, which was re-published with great fanfare (and some undeserved derision) in 1997. I remember a blurb on the book jacket from a previous edition, by a bride who swore she toted the book along when she moved abroad. Which I didn’t, although I was hardly a blushing bride. So at least I have an excuse.
