Verjus Sandwiches

[UPDATE: Verjus is no longer serving sandwiches in their wine cellar, nor are they open for lunch. The regular restaurant is still open for dinner and the wine bar is open in the evening for wine and top notch bar snacks.]

A friend who’s been living here quite long time once wondered aloud to me, why Parisians sandwich-makers weren’t more creative. I never really thought about it; because I buy sandwiches so infrequently, I’m really happy to have a simple, classic jambon-fromage with a smear of butter on a baguette. But I suppose if I ate sandwiches daily, like so many people now do, that I’d also want a little diversity between the slices. (In my defense, I’ll sometimes see if I can get goat cheese on my sandwich, rather than the usual Emmenthal.)

That probably explains in popularity of the Subway chain in France, who offers something different from the French classics. According to their website, they now have around 66 outlets in Paris. But I’m not joining the lines, though, because it’s where I had one of the worst sandwiches of my life back in the states. You’d think it’s pretty hard to f-up a sandwich. Thankfully, things have taken a turn for the better.

SOS Helpline in Paris

Living in a foreign country means that everyday tasks, from going to the bank to buying a bunch of bananas at the supermarket, can be a cultural minefield. (I’m still smarting for being berated by a Monoprix cashier for not having exact change a few days ago.) Although it can be an exhilarating adventure, it’s easy to feel isolated and stressed when adjusting to life in another culture.

Paris is a beautiful, vibrant city, but like any other major city, it’s hectic and stressful, and life as a foreigner can magnify problems. And it can be hard to talk to people ‘back home’, who are normally part of your support group, who don’t realize that Paris is not always croissants, chocolates, and walks along the Seine.

So it’s nice to know that there is a resource here to help. I was recently a speaker at an event to benefit SOS Helpline, an English-speaking team of listeners available every day of the year trained to talk to those in need or to refer people to specialists. It’s free and anonymous.

They’re available every day of the year, from 3pm to 11pm at 01 46 21 46 46 – and the call is free. The service is confidential and non-judgmental, and the listeners are trained to deal with a variety of issues, from loneliness, depression, substance abuse, to financial problems and bereavement. If you’re one of those people who’ve been trying to get one of the coveted places at Hidden Kitchen, the supper club in Paris, liberté and egalité have arrived in the form of a wine bar and restaurant called Verjus.

After running their successful dinners, they’ve decided to take the plunge and create a warm space where they could welcome any and all guests, whether they want a glass of wine in their cave, or a full meal in the upstairs dining room. The restaurant is now open (and it sounds like they have enough stories about the problems they’ve had starting it up to write a book), the wine is flowing in the cave beneath it, and both are wonderful.

Caramelized White Chocolate Cakes

Laura Adrian is half of the team behind Verjus, a wine bar in Paris that she runs with her partner Braden. With a little help from an adorable Boston Terrier that pops his head into the action every once in a while.

Laura worked for one of my favorite bean-to-bar chocolate makers in America, Theo chocolate in Seattle, before moving to Paris. Due to word-of-mouth, and because of the innovative yet familiar cooking, their supper club Hidden Kitchen (which they ran before opening Verjus) was deservedly booked months in advance.

One night I was having dinner there, and Laura leaned over and said, “I’ve been making a cake with the caramelized white chocolate recipe that’s on your site. It’s pretty amazing.”
