Ready for Dessert Note: Using Chopped Chocolate

Am glad to hear, and read, that many of you are enjoying the Chocolate Chip Cookies from Ready for Dessert. Just a quick note that the recipe (page 188) calls for adding “…bittersweet or semisweet chocolate, coarsely chopped.” They should resemble these. I prefer hand-chopped chocolate since the chunks melt nicely in the cookies, and folks should add all the chocolate—including the tiny bits and…

Chocolate Bread

When I got the opportunity to re-release my first two books, which had gone out of print, my publisher and I decided that they should be combined into one brand-new volume, Ready for Dessert, with new photos and more than a dozen new recipes added. So I made a master list of all the recipes, then chose my absolute favorites: the ones I’d found myself…

Rue Montorgueil and Les Halles, Paris

You might not remember the days before the internet, but when we used to travel somewhere, we’d ask a friend to scribble down a list of suggestions. And we’d often be asked to do the same in return. Then when computers became widely used, other ‘favorites’ lists started circulating, including suggestions posted in online forums and in blogs. So think of this list as my…

Amnesty Cookies

When I was speaking at the Blogher Food Conference last year, one of the organizers was telling us that on the last day of each month, she carries out what she calls E-mail Amnesty Day. On that day, she deletes all her e-mail in her Inbox, then issues an all-points-bulletin to everyone she knows that if there was anything important in there, to e-mail her…

Parisians aren’t especially fond of cakes with thick layers of frosting or…

Natural cocoa powder is made from cocoa beans that are simply roasted, then pulverized into a fine powder. What does Dutching do? Aside from neutralizing the acidity, Dutching cocoa powder makes it darker (see photo…

10 Romantic (and Sexy) Things to Do In Paris

For those of you who have The Perfect Scoop, you may already be familiar with my friend Heather Stimmler-Hall, who writes the popular website, Secrets of Paris. She’s the one who attempted to seduce her Parisian neighbor with a batch of my ice cream. Not that she needs my assistance (I didn’t ask her how it turned out since I’m such a gentleman, and she’s…

Chocolate-Hazelnut Spread

I’m probably not the sharpest knife in the drawer, because about a decade ago, I met two guys who were planning to start a bean-to-bar chocolate company in America. And I remember thinking, “Hoo-boy, are these nut-jobs going to lose their shirts! Who in America cares that much about chocolate?” Fast-forward to a few years later, and Scharffen Berger chocolate became a huge hit, challenging,…
